Common Harvest Timing Mistakes

  • Harvesting sweet corn in afternoon heat: High temperatures accelerate the conversion of kernel sugars into starch within 2 hours of picking. Always harvest sweet corn at dawn when ears are crisp and sugar content peaks.
  • Picking winter squash before full stem cure: Harvesting butternut or pumpkins while stems are green allows fungal decay into the fruit crown. Wait until vine stems turn brown and corky, then cure at 80°F for 10 days.
